Tofu is a vegan replacement for meat that is high in protein, cheap and easy to make! Poke bowl is traditionally made with tuna or some kind of fish. But for thiw recipe we’ll be using bio tofu, which soaks up the soy-teriyaki marinade and has a tender mouth feel from the corn starch.
Tofu poke bowls are the perfect healthy meal throughout the day, and can be made up in less than 20 minutes!
How To Make Tofu Poke Bowl
- Press the tofu: start by pressing the firm or extra-firm tofu with a towel.
- Make the tofu marinade: in a bowl whisk together the soy-sause, teriyaki, garlic powder and corn strach.
- Marinate the tofu: add the tofu to the marinade, gently toss to coat and let set for 5 minutes.
- Prep your veggies: while the tofu is marinating, prep the bell pepper, sweet corn, spring onion, avocado and beetroot.
- Cook the grain: for the grain use short grain rice or sushi rice, cooked with rice vinegar.
- Asseble: Assemble your tofu poke bowl and enjoy all the deliciousness of this simple, savory meal!

Start by pressing the firm or extra-firm tofu with a towel, and cut it lengthwise down the center and then into cubes.

In a bowl whisk together the soy-sause, teriyaki, garlic powder and corn strach. Add the tofu to the marinade, gently toss to coat and let set for 5 minutes.

While the tofu is marinating, prep the veggies by cutting them in small cubes.

Cook the rice with the water and the rice vinegar.

Put the tofu in the air fryer and cook for about 15-20 minutes.

Assemble your tofu poke bowl and topped with seasame seeds and a drizzle of sriracha sauce.
