Ingredients
    To season the potatoes
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp sweet paprika
  • 1/2 tsp ground oregano
  • 1/2 tsp garlic powder
  • For the salad
  • 1 can chickpeas (Can be found in jars or cans)
  • 2 medium sweet potatoes
  • 1 red bell pepper
  • 6 cherry tomatoes
  • red cabbage
  • lettuce
  • rocket or arugula
  • feta cheese
  • olive oil
  • balsamic vinegar
  • salt
Instructions
  1. At first, wash the sweet potatoes then cut them into small cubes.

  2. Mix all of the seasoning ingredients in a small bowl, then sprinkle over the potatoes, toss until the potatoes are well coated.

  3. Transfer the potatoes to the air fryer basket and cook for 20 minutes at 180°C.

  4. While to potatoes are cooking, open the can of chickpeas, drain and rinse them well with water.

  5. Cut lettuce, cabbage, red bell pepper, cherry tomatoes and rocket to your liking.

  6. When the potatoes are fully cooked remove from the air fryer and divide them in two salad bowls. 

  7. In the two bowls divide the remaining ingredients and top with feta cheese.

  8. At last, season with olive oil, balsamic vinegar and salt to your liking.

  9. Enjoy!
