This delicious healthy salad is quick and easy to throw together – no need to mix a complicated vinaigrette or dressing.It can also be customised endlessly to use up whatever you have in the fridge.

At first, wash the sweet potatoes then cut them into small cubes.

Mix all of the seasoning ingredients in a small bowl, then sprinkle over the potatoes, toss until the potatoes are well coated.

Transfer the potatoes to the air fryer basket and cook for 20 minutes at 180°C.

While to potatoes are cooking, open the can of chickpeas, drain and rinse them well with water.

Cut lettuce, cabbage, red bell pepper, cherry tomatoes and rocket to your liking.

When the potatoes are fully cooked remove from the air fryer and divide them in two salad bowls.

In the two bowls divide the remaining ingredients and top with feta cheese.

At last, season with olive oil, balsamic vinegar and salt to your liking.
