Lentil and sweet potato curry

In a large wok add the olive oil and the chopped onion, saute for 5 minutes.

Chop the sweet potatoes in small cubes and add them into a wok with the lentils.

Season with the curry, ginger, salt and pepper.

Pour in the broth and the tomato paste, let the mixture boil for about 30 minutes or until soften.

Add the kale and red pepper flakes, then boil for another 5 minutes.

Serve with rice and feta cheesee.
