  1. Preheat the oven at 200°C.

     
     
  2. Heat the olive oil in a pan over medium heat. Add the chopped onion and sauté until it becomes translucent.

  3. Add the chopped spinach to the pan and cook for a few minutes until it wilts down. Season with salt and pepper to taste. Remove from heat and let the mixture cool.

  4. Once the spinach mixture has cooled, transfer it to a mixing bowl. Add the crumbled feta cheese, mozzarella, egg, flour, salt and pepper. Mix well to combine all the ingredients.

  5. Fill a shallow dish with water. Dip one rice paper sheet into the water for about 10-15 seconds, or until it becomes soft and pliable. Remove from the water and place it on a clean surface.

  6. Spoon a small amount of the spinach mixture onto the lower third of the three rice paper sheets, leaving a small border around the edges.

  7. Fold the sides of the rice paper inward and then roll it tightly, starting from the bottom, to form a compact roll. Repeat this process with the remaining rice paper sheets and spinach mixture.

  8. Spinkle with seasame seeds and bake for 25-30 minutes.

  9. Let them cool and enjoy!
