  2. In a skillet, lightly sauté the diced leeks and spinach over medium heat until they are slightly softened. You can use cooking spray or a small amount of olive oil for greasing the skillet.

  3. In a separate bowl, whisk together the eggs, salt, black pepper, garlic and oregano until well combined.

  4. Press the dough into a 9-inch pie dish, spreading it evenly along the bottom and up the sides.

  5. Stir in the sauté vegetables.

  6. Pour in the egg mixture.

  7. Sprinkle the feta cheese.

  8. Bake in the preheated oven for 45-60  minutes, or until the quiche is set in the middle and the crust is golden brown.
