Ingredients
  • 50 ml coconut oil (melted)
  • 50 g coconut sugar
  • 1 egg
  • 90 g oats
  • 90 g oat flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 45 g chopped pistachios
  • 45 g white chocolate chips
  • some dark chocolate (melted for drizzle)
Instructions
  1. In a bowl mix toogether all the wet ingredients until smooth.

  2. Add in the dry ingredients and combine until a dough forms.

  3. Add in the pistachios and the white chocolate chips and stir gently.

  4. Split the mix equally into 8 cookies, shape and place on a lined baking tray.

  5. Bake for 10 minutes at 180°C.

  6. Drizzle with the chocolate and let it cool before eating.
