Ramen is a traditional Japanese noodle soup, with a rich flavoured broth, different types of noodle and a combination of meats and vegetables, often served with a boiled egg.
There are many variation of Ramen soup, depend due to the type of broth, noodles and the toppings.
In a saucepan heat the sesame oil. When is hot add the ginger and garlic and let them simmer for 1 minute, stirring often.
Spoon the chili garlic paste into the pan and stir.
Add the soy sauce and the rice vinegar. Give it a quick stir, then add the chicken broth and stir again.
Allow the broth to simmer for about 20 minutes. While it simmers cook the ramen noodles in hot water for about 10 minutes, your egg(see notes), and prepare your toppings.
When the noodles are ready strain them and transfer them to a large bowl. Spoon broth over the noodles, and then garnish with the toppings.
