In a large mixing bowl, combine the flour, salt, sugar, and instant yeast. Mix them together well.
Add the lukewarm water and olive oil to the dry ingredients. Mix everything together until a sticky dough forms.
Knead the dough with a spatoula for about 3 minutes until it becomes smooth and elastic.
Cover the bowl with plastic wrap, and refrigerate about 2-3 hour or until it doubles in size.
Preheat your oven to 200°C .
Grease a tart pan with 1 tablespoon of olive oil and transfer the risen dough onto it. Gently stretch and press the dough to fill the baking pan evenly.
Drizzle the remaining 1 tablespoon of olive oil over the top of the dough, spreading it out with your fingers to cover the entire surface.
Now it's time to add your desired toppings. Sprinkle herbs, thyme, cherry tomatoes, olives, or any other toppings you prefer over the dough.
Finally, sprinkle some coarse salt on top for added flavor.
Place the baking sheet in the preheated oven and bake the focaccia for approximately 20-25 minutes or until it turns golden brown.
Once baked, remove the focaccia from the oven and let it cool for a few minutes before slicing and serving.
