Pile on Brie, sliced figs and thyme into the sliced sourdough bread.
Cook over medium low heat in an olive oil coated frying pan until the cheeese is melted and the bread is golden crisp.
Once out of the frying pan, drizzle with honey, slice in half and enjoy every bite!
