Ingredients
  • 1 cup black eyed peas
  • 1 mango
  • 1 cup cherry tomatoes
  • 1 red bell pepper
  • 1/3 cup olive oil
  • 2 tbsp valsamic vinegar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 spring onion
Instructions
  1. Place a pot over high heat, add water and salt, and bring it to a boil. 

  2. Add the black-eyed peas and boil them for 40-60 minutes.

  3. Remove the pot from the heat, drain the black-eyed peas, and transfer them to a bowl.

  4. In a bowl add salt, pepper, olive oil, and the balsamic vinegar, and whisk them well.

  5. Add the black-eyed peas to the bowl.

  6. Finely chop the green part of the spring onion, the pepper  and add them to the bowl. 

  7. Cut the cherry tomatoes in half and add them to the bowl.

  8. Peel the mango, cut it into cubes, and add it to the bowl. 

  9. Mix the salad with a spoon and serve.
