This avocado toast is a healthy and quick breakfast/brunch idea, full of healthy fats and nutrients. Also is packed with flavor with layers of sliced avocado, smoked salmon, "fried" egg and arugula, on top of a thick slice of sourdough bread. I think this is the best way to start your day!
Sourdough Bread: has a rich, nutty flavor that goes well with the creamy avocado. Also sourdough bread is easier to digest.
Avocados: They are in vitamins C, E, K and B6. They are also high in fat. But it's monounsaturated fat, wich helps lower bad cholesterol, as long as you eay them in moderation.
Smoked Salmon: Is full of nutrients, vitamins and omega-3 fatty acids, all of them can boost your health and lower the risk of heart disease and cognitive decline.
Eggs: Are powerhouses of nutrition packed with protein and a range of 18 vitamins and minerals.
Drizzle with olive oil a small pan. Heat over medium heat. Crack the eggs one at the time into the pan and cover.
While the eggs are cooking take 2 slices of sourdough and toast to desired doneness. Meanwhile cut the avocado into thin slices.
Begin assembling your avocado toast. Start with a layer of the avocado slices on top of the sourdough, add a layer of arugula, followed by the smoked salmon. Remove the eggs from the fry pan carefully and slide them on top of the salmon.
Top with a sprinkle of red pepper flakes and salt.
